城市人近年來的工作壓力愈來愈大,容易做成精神緊張而產生抑鬱症。有醫生建議患者吃些朱古力來鬆馳一下神經,因為朱古力含有可可豆中能改善抑鬱不安情緒的特別成份。
今次來做一個加入了棉花糖、朱古力碎的石板街(Rocky Road)的變種朱古力慕絲蛋糕。 |

棉花糖、朱古力碎、杏仁片、草莓、糖粉、朱古力條 |
| 做法 |
1.將魚膠粉、水、黑朱古力及1/3糖放入容器中,隔熱水打勻成朱古力漿。 2.用機或手發忌廉及1/3糖至成泡膠狀,不要過份打發。 3.將蛋白加1/3糖發勻呈泡狀及有光澤。 4.將忌廉用撈拌方式和朱古力漿拌勻,最後加入蛋白泡,拌和即可。 5.蛋糕圈放在蛋糕紙板上,放入一塊清蛋糕,倒入一半朱古力漿,隨意放上棉花糖、朱古力碎和杏仁片,再放入另一塊清蛋糕,重複步驟。 6.放進冰箱中隔夜冷藏至的完全凝固,可以草莓,糖粉及朱古力條作裝飾。 |

2 pc. 7-8” Plain round sponge cakes 260g Cream 28g Egg white 9g Gelatin 33g Sugar 106g Water 62g Dark chocolate |
For decoration (quantity as desired) |
| Small cotton candy, shredded chocolate, almond slices, strawberries, icing sugar and chocolate strands or chips. |

Method |
1. In a mixing bowl, combine gelatin, water, dark chocolate and 1/3 sugar. 2. Place bowl in hot water and blend well till it turns to a thick chocolate mixture. 3. Blend cream and 1/3 sugar till it becomes solid and foamy. Do not over-blend. 4. Blend egg white and 1/3 sugar till solid and foamy. 5. Combine all three mixtures together gently. 6. Place the ring on top of the card board, put in one sponge cake, pour in half of the mixture, smooth out, add on cotton candies, chocolate strands and almond slices. Place the other sponge cake on top, repeat. 7. Refrigerate over night until formed. Decorate with strawberries, icing sugar and chocolate chips. |
